Le Cinq on a Sunday Night?

We're going to be in Paris early next year for only four nights, arriving on a Thursday and leaving on Monday. We prefer not to eat too heavily in the middle of the day, and I am already feeling challenged by winnowing the list down to four restaurants given all the wonderful choices...I will be posting more questions once I feel have done adequate due diligence, but the acclaim here for Le Cinq has led me to choose it for our one grande bouffe. Given that it's open Sundays and that it seems challenging to find worthy restaurants for that night, I wonder if it makes sense to eat dinner at Le Cinq then? Or do you think that we will be the only ones in the restaurant, that we'll feel like we're eating in an empty luxe hotel dining room, and that our food will be prepared by new on the job apprentices? The last thing we'd want to do is compromise what sounds like a wonderful experience...
