L.A. girl coming to SF, have ideas, need more recs

Here's what I've come up with so far: Tartar and Chez Panisse for high-end.
Maybe the weeknight prix-fixe special at RNM for $25 one night.
One night at Hog Bay for oysters and wine.
Saigon sandwiches for lunch or snack sometime.

Questions:

Is Burma House any good? It's near where I will be staying.
Is Pancho Villa taqueria good? I've seen it written up in various places.
Where should I go for dim sum? I'm staying in Tenderloin/Union Square area and will likely not have a car. Maybe somewhere on the way to GGB, as I'd like to walk across it on Sunday afterward.
How is Bacar for food? Quince?
And for wine bars, how about Hotel Biron and 22 Club I think it's called?
Any other suggestions?
