Korean Fusion – Kimchi stuffed pork chops

Kimchi can easily be used in many non-Korean dishes/meals. It goes extremely well with pork.
Take a few thick cut pork chops and make a “pocket” in the meat by cutting an X in the center of the chop(s), just shy of half way through. Place the knife at a shallow angle into the ”X” and rotate in a circle, making sure not to cut completely through.
Mince some kimchi, maybe some garlic and chili or sweet pepper, and stuff into the “pocket”. Season the chops with simple salt and pepper, or a seasoning mix, then bake to your preferred “doneness”.
Simple, easy, tasty.
