i am planning my trip to Tokyo in early Apr and will like to try at least one good Kaiseki restaurant. i asked the hotel concierge to help to book but apparently can't get any that i have shortlisted. Reply from hotel as follows:
Hoshino is already fully booked in this year.
Seika Kobayashi, KYOAJI and MATSUKAWA won’t take reservation of first-time customer.
Kurogi is already fully booked until the end of July.
We would try Den, but it’s always hardly ever succeed to reserve as same as Sushi Saito.
Will someone kindly recommend a kaiseki restaurant that is good and easier to book?
Also curious to the practice of these famous restaurants not accepting first-time customers, what is their rationale? shouldn't good food be enjoyed by all?
