Now that Junior's has closed, and short of trying myself to replicate the old-timey Jewish bakery combination of spongecake, marzipan, and raspberry and apricot jams (which I know won't fly), does anyone know of ANY bakery which makes this cake for Passover?
To be specific, it had a sponge cake base and a piped, oven-browned marzipan lattice, which was then filled in with raspberry and apricot jams (sometimes all raspberry or all apricot).
I've been buying this cake every spring since my family used to get it at the late lamented Atlantic Square Bakery in Monterey Park, and I found Junior's version to be a good substitute. But now that Junior's is gone I am bereft. Help? Willing to drive practically anywhere (I live in Mt. Washington). Thank you.
