I'm a little hesitant to even post this, because I don't want anyone to be offended. But the result is so good that I have to share. Please don't hate me, but here is a decidedly un-kosher variation on Jim's recipe:
Jim says to fry up your Matzoh Brei in butter, and I'll tell you that that makes some pretty good MB. But let me tell you that if you fry it up in about a half inch of bacon fat, IT IS TRANSCENDENT!
I was skeptical myself, but since I'm not particularly religious, I figured I'd try it out, and it rocked my world. If it contradicts your principles, don't try it.
