Japanese Restaurants

I'm going to be in NY in a couple months (Birthday weekend) and am presently planning the meals. I called up Danube and am having Mr. Bouley make a speacial tasting menu on Fri. Night and am trying to come up with something for Sat. I was thinking along the lines of Japanese and as this is a special occasion (sort of a joint birthday party as both my parents and I all have Birthdays in November) I would love to use this meal as an exploration into the uppercrust of NY Japanese dining. Because we're so far in advance reservations should be an issue. Places I had in mind were Sushi Yasuda, Kurama Zushi, Nobu, and Sugiyama (spelling?). To give you an idea of the NY japanese restaurants I've loved in the past, I adore the sashimi at Sushiden and have enjoyed two great kaiseke dinners at Toraya. Thanks for all your help.


P.S. Undecided about whether Gramercy for dinner and a japanese lunch or a Japanese dinner and $20 Gramercy lunch special, what are your thoughts on which to do when? Thanks again.
