Japanese restaurant in the GTA, like Hong Kong's sen-ryo?

I only eat cooked foods but still adore Japanese food, so are there any restaurants in the GTA that resemble Hong Kong's sen-ryo (in Chinese: 千両)? For those unfamiliar with this restaurant chain, I expand on their selections under the dashed line. Here are two reasons why I'm seeking a counterpart in Toronto:

1. Most of the ingredients are fresh and of high quality, and thus superior in flavour and quality to regular Japanese restaurants. Their prices are ordinary and reasonable (as indicated in the menu below), which reflect the informal, modest, relaxed, but very clean environment.

2. I relish the option to request that raw items be cooked, which significantly increases menu options for a eater of only cooked foods. For example, they can sear dishes normally served raw or partially raw , until they're well-done and fully cooked (eg with a burner torch). I can't find a Japanese restaurant in the GTA that offers this?
