Japan Trip: Fukuoka -> Osaka -> Tokyo

Hey folks. We (my wife and I) are taking a 2 week trip to Japan in May. We are starting in Fukuoka and work our way up to Tokyo. I have been to Japan before but my wife hasn't. So I'm excited to go with her there.

My wife prefers to do things on bit of whim based on how she's feeling so I'm keeping things bit unstructured but I'm doing research on my options so what spots to hit based on which neighborhood we are in.

We'll be spending 11 days there total (not counting the day we land or leave),
Fukuoka: 2-3 days
Osaka: 4-5 days
Tokyo: 4 days

I have already got reservations for three restaurants in Tokyo:
- Sushi Sawada (lunch)
- Sushi Tokami (dinner)
- Omotesando Ukai-tei (lunch)

And I plan to go to:
- Kagari Ginza (I think they moved but I loved that paitan ramen last time)

Was sad to hear that Sawada doesn't offer otsumami for lunch or that Chef Sato is no longer at Tokami. I ate with him in 2015. That and Ichiyangi were the highlights of that trip.

I would love to hear of any restaurant recommendations:
- curry rice/pan
- izakayas
- ramen (especially tonkotsu or paitan, not a fan of shoyu or shio as much, hitting Fukuoka specially for this to look at non-chain ramen)
- tempura
- yakitori
- tonkatsu
- kappo (non-kaiseki)

Left to my own devices, I would hit Sushi, Ramen and Curry Rice again and again which is what I did last time. This time I want to make time for trying out the other things as well.
