Italy - Where to eat in between meals?

Hi Chowhounds -

I posted about a month ago asking for suggestions on “best meal of your life” in Italy and received some excellent suggestions. Thank you! I’ve planned most nights' dinners (highlights will include Caminetto D’Oro, Villa de Gaillo, Alle Testiere, La Calandre, Tadeo E Federico, and others) and some lunches. But I was wondering if anyone could suggest favorite specialty delis or markets, wine shops, charcuteries, and fromageries?

I’ve scrolled through past chowhound posts and learned about Macelleria in Panzano (cured meat heaven) and others have mentioned Tamborini market in Bologna, and the pastry shop in the La Calandre complex. Do you have other suggestions? Despite my apparent obsession with sit down restaurants, we really do enjoy grazing and picnicking and would love suggestions on where we can buy the best wine, olives, cured meats, and cheese Italy has to offer.

As for geography, we are in the following places (and will have a car): Rome, Pienza, Bologna, Venice, Padua (one day only), Spello, and then back to Rome.
