Hello all. One of my wife's and my favorite sauces used to be at Bonefish Grille, called Walker's wood. It was on the specials menu but they always had some onhand if you wanted it on a pork chop or swordfish or something. It was spicy (more peppery than spicy I'd say), a bit oily, and very richly flavored. It's been over a year since we've had it so I'm going off memory here. It had mushrooms and I believe either pimento or, more likely, red pepper. I know those two things taste nothing alike but the flavor of that bit didn't exactly stand out in this sauce. Anyway, I'd love to be able to cook up something like it.
I found this, it's not at all a clone or anything, but it looks interesting nonetheless: http://www.squidoo.com/the-best-jamai...
Can anyone else who may have had this sauce chime in on what might have been in it? I do not have a great palette for detecting flavors in dishes, unfortunately. Any ideas or suggestions are appreciated!
