ISO Recipe for Berthillon Ice Cream

My husband harks back to our trip to Paris and the ice cream we had at Berthillon. He keeps asking why I can't make ice cream like that. I usually use a custard base so my ice creams are very rich and creamy. He felt that the Berthillon was more like a sorbet but richer. Any ideas of how to produce the Berthillon type of ice cream? TIA.
