ISO recipe for Amish-style tripe in aspic

The picture is of the pickled tripe I purchased at King's Meats at the Green Dragon Friday market in Ephrata PA. As you can see, it's not just pieces of tripe but cubes of meat in a gel which is one of the best things I have ever tasted.

Has anyone seen this pickled tripe prep elsewhere? Do you know how to make it? Tripe doesn't have collagen so it can't be boiled down to produce its own jelly (plus tripe cooking liquid is pretty foul). I'm tempted to make a pork aspic, like for head cheese, but that seems like cheating since tripe is from cow.

Suggestions and experiences please!
