Three hors d'oeuvres - they gotta rock (long)

I have been asked to bring two to thanksgiving dinner (just four of us) and I really want them to be aweeeeessome. The 2 requested are mini crab cakes and bacon wrapped water chestnuts (yes, they feel free to make specific suggestions and that doesn't bother me since I am unbearably indecisive at times)

Here are the plans:
1) mini crab cakes will start with good (but not the top top top ) lump, mixed with finely diced red bell, scallions, mayo, maybe an egg, a touch of old bay, a touch of horseradish. rolled into 1" balls and pan sauteed (maybe light breadcrumb - ever so light outside?). cooled and reheated in oven at location - placed on 1" square (pepperidge farm thin bread) toasts that had been toasted with oil and an herb (suggestion?) and topped with a dollop of tarragon mayo. thoughts?

2) bacon wrapped water chestnuts - good, but boring. thoughts?

3) in addition, or in place of, I was thinking of the proscuitto wrapped dates stuffed with parm which everyone here has been mentioning and I see everywhere in mags....

OH YES - AND MAIN COURSE is lamb chops, fyi, don't know anything else (am not in charge of anything else)
