Homemade Giardineira, anyone?

I'm trying to figure out how to make authentic Chicago hot peppers in oil but can't find a recipe or procedure, anyone have any experience? I'm thinking that you just take the peppers, put them in oil, and then can them but i wanted a specific recipe so I don't get botulism or something. Anyone know how Scala's, etc., does it?
