looking for some homebrew help

Good morning,
I am trying to decide 1 or 2 beers for my father to make for himself and some coworkers. I am going to put the basic in a list so it doesn't look so scattered.
His favorite beers are dunkels (and other dark wheats) and fruit beers (especially flemish reds but those are just tough for our skill level).
He would like to brew one pumpkin beer to leave in secondary fermentation right through mid-October.
The other beer, he would like either an Oktoberfest (not too hoppy) or something fruity. I suggested a raspberry wit or something with some apple to it. I just don't know how to go about that. I have done a mixed berry one myself but my father has not.
He lives in Fort Collins, CO now and has never brewed in the higher altitude (brewed in Michigan). Some produce or speciality of the local area might be nice to incorporate.

Please help me. It will likely be all grain.
