Hey Whitney--Corn Chowder

This is too late, really. But for the next time the craving hits....

2 cans creamed corn
1 canful of milk
1 canful of half and half
5 small potatoes--peeled and diced
1 onion--chopped
at least 6 slices of bacon
salt and pepper

place potatoes into enough salted water to cover. Boil until fork tender.

fry bacon in bottom of Dutch oven until nicely browned and crispy. Remove, drain on paper towels, and crumble. Saute onion in bacon fat. Drain fat from Dutch oven.

Put creamed corn, milk, half and half, and potatoes into Dutch oven. Stir. Heat until not quite a simmer for at least 20 minutes (can go much longer if you like.) Stir in bacon just prior to serving. Salt and pepper to taste.
