Headcheese: has anyone made it?

That's about it. I had headcheese for the first time about two days ago and I adore it. It was such a surprise to me. So mild tasting. Fatty but not gelatinous. I have access to whole pig heads and any other parts and am thinking I may just have to make this. Anybody have any info, recipes, warnings?!? Thanks as always.
