Last week I made home-made nutella for the first time. What you do is grind toasted hazel nuts in a food processor until they form a paste, and then add sugar, coco, oil, and vanilla.
I've been thinking a lot about the hazelnut paste that you make, and I've decided that this week I'm going to try to make the nutella again but leaving out the coco, so you just have a nice sweetened hazelnut paste. I think I'm going to make a tart shell, and pour the sweetened hazelnut paste into it.
My stumbling block is what to put on top of it. I was thinking fruit, but I don't really know what kind of fruit would go well with hazelnuts. Any ideas?
The other thought was to make a thick caramel sauce and put that on top, but i was worried that that would make the whole thing too sweet. Maybe someday I'd do it with chocolate ganache, but I really want to play with the hazelnuts without chocolate, just to see the possibilities.
Anyway let me know if you have any ideas for things to put on top of the hazelnut paste.
