Hash brown crust mini-quiche for a crowd - Can I make it in advance?

It'll be about 40-50 people for a brunch time baby shower. I'd like to be able to make about 100 of these in regular size cupcake pans. Using frozen hash browns as the base, I know that the "crust" part needs to be cooked for about 10-15 before the filling is added. I'm wondering if I could do this part x 100 ahead of time (like a week?) and freeze them. Then on the day of, put the thawed & cooked hash brown crust back into the pans, just add filling and bake. Will this work? Or is it crazy to par-cook the crust too far in advance?

A couple of things:
- I know I could always make crustless mini-quiche – and that's still on the table – but man, I think the crust really makes it taste like a QUICHE (even if the crust is not traditionally potato). Also having a crust makes for a nicer presentation.

- I've also thought about cutting out rounds of a pre-made pie crust. I guess I could always pre-cut the rounds and assemble the morning of. Ok so this will be Plan B.
