The posts about dining in the dark at Suba reminded me of the former chef at Papillon (maybe his name was Riebrandt? but I could be mistaken) who was, for awhile, serving a 12 course tasting menu that you ate blindfolded. By the time I got there he was no longer serving it, but his food was definitely cutting edge. Some of it failed miserably, but some was great, and it really challenged the way you thought about food. However, I have heard that he is no longer at Papillon. Does anyone have any idea where he went? Thanks!
