I have jalapeños and Thai peppers growing. growing well. I will pick a jalapeño to eat fresh with a sandwich or something occasionally, but I am letting the Thai peppers go. I have lots. two have turned red. I have not cooked anything that needed a Thai pepper.
my thinking was to make hot sauce, and IMHO, red hot sauce is better looking. I believe the peppers themselves are less hot when red (?). truth?
