GOUGERES - Home Cooking Dish of the Month, November 2019

Welcome to our DOTM reporting thread for November 2019. Our dish this month is Gougeres, and boy is my family going to be excited when they find out. Once again I rely on Wikipedia, which says: a gougère, in French cuisine, is a baked savory choux pastry made of choux dough mixed with cheese. There are many variants. The cheese is commonly grated Gruyère, Comté, or Emmentaler, but there are many variants using other cheeses or other ingredients. Eat Your Books (EYB) says there are 89 online recipes.
