I'm not really big fan of Pastis,but I just go this place for the Tripe gratin in casserole.I love tripes but I don't see tripe dish on the menu at french restaurants in NY often.So, Pastis has become my tripe place.
The tripe here is not stew type like Tripes a la mode de Caen(I've always dreamed about going back to Pharamond),it's gratin.The tripes are fresh(no smell at all) and covered with cheese gratin,these come with bed of spinach,carrots,potatoes,served in casserole.It's very hot,right out from oven(it takes longer time than other dishes).The portion is big enough for one meal.$15(this is the one of the cheepest
This is one of my regular food in autumn&winter last a couple of years.
Don't forget the Ile Flottante(floating island/island of meringue is floating on sea of custard sauce).
