No-gluten baking

Does anyone have experience baking with non-wheat flours? I saw a mix of a couple different flours in the store, but don't know if the texture of baked goods will come out properly.

I want to make biscotti for a gluten-challenged friend who likes them crisp to the point of being hard.

Any pointers?
