OK, this is so out of left field but when we lived in Germany, my mother use to buy a kind of generic luncheon meat that is pale in color and wrapped in a bright yellow "skin" that you remove. You could get it at any butcher. She would use this for her banh mi since she sure as heck couldn't find the real deal back then. It is roughly the same circumference and color as the Viet meat.
I actually like the German stuff better and was hoping to find the name. It's weird, I know, but I am going through a mommy food phase. Thanks!
