German Potato Salad Discussion

This is something I've been thinking about for a little while and thought I'd post and get reactions. Our family's traditional Christmas Eve dinner is BBQ'd brisket, BBQ'd beans(Hey, we live in KC), German Potato Salad, breads, cheeses, etc. My Mom makes the potato salad. Her recipe is simple, boiled potatoes, hard boiled eggs, diced cooked bacon, onions cooked in the bacon fat, and then she adds apple cider vinegar to the bacon/onion, S&P. That's it, no sugar, no brown sugar, nothing sweet. Every where I've had this, other than my Mom's, its been sweet. My question is this, which is the "authentic" GPS? How do you like it. There is no converting me, Mom makes it best. Just wanted to get other hound's opinions.
