Some Russians I knew held a lunch potluck today, and one woman brought this Georgian dish. It was amazing!
I'm going to try it as soon as I can find some good aubergines. Does anyone have tips or ingredients to add to this list?
(Aubergine) with Walnut
Eggplants-2 or 3 lbs
Walnuts- about 1 cup
Garlic-3 or 4 cloves
Saffron, pepper, salt, oil, vinegar to taste
The recipe I found on line was more of a stuffed fried eggplant, but in the interest of ease and low-fat today's version was boiled/steamed eggplant chopped up with everything else. It definitely had a vinegary tang to it, and the combination of onion and spices was incredible. This would be a great dish to add to any collection of "spreads to put on pita or toast points before a party."
