Gazpacho Weather

Today the heat index is going to 100 and all I can think of is gazpacho, the staff of life in this weather. In case you haven't made it yet: chop coarsely in food processor 4 large peeled tomatoes, 1 seeded green pepper, 1 medium onion, and 1 peeled cucumber. Add all of this to a 46-oz can or jug of tomato juice. Season with salt, garlic powder, 1 tsp cumin (ESSENTIAL), and 2 tablespoons each olive oil and vinegar. Taste; correct seasoning. Keeps in refrig for a week and just keeps getting better. Eat it ice cold. (To peel tomatoes easily pour boiling water over them an inch deep and cover so they get steamed for a minute or two and peelings will slide right off.)
