Interesting tidbit today from an old friend of Frank's who had a recent discussion with the Maitre D from Galatoire's, I think he said the man's name was Herman, about his childhood memories of lunch at Galatoire's. It seems they were seated at the same table at a wine dinner at RioMar early last week and our friend mentioned a salad he remembered from his pre-teen years (he's an older guy and this would have been in the 1950's).
The salad was called the Glockenspiel Salad. Herman's response was that it wasn't on the menu but they could still make it if one of the old timers who knows how was there. Apparently there are other hidden specials, including a Gus Mayer Salad. Our friend tells us that Herman said he didn't know himself how the salad was composed, I'm wondering if anyone remembers these salads, the ingredients and how they're put together, etc.
