Frozen sorbet rock solid

I'm not well practiced in making sorbet.

When I've made sorbet, it is only good right after making, when I place it in the freezer, it freezes solid, ice cube like. I understand that sorbet is water but I've had the scoopable stuff store bought.

Do I have unrealistic expectations or does my ice cream maker not put enough air/whatever it needs to keep it from freezing solid?
