So a few weeks ago I made 2 batches of homemade potato latkes. I made them on consecutive weekends, wrapping and freezing each batch seperately.
I defrosted both on Saturday afternoon, heating most of the older batch up for a dinner party. We didn't go into the second batch, which has been resting peacefully in the bottom of my refrigerator.
I'm having another dinner party on this coming Saturday evening. I'd like to serve the latkes then (actually almost Chanukkah!), but I'm not sure if they'll be OK. I don't think the package (tray covered in heavy foil has been opened.
The question is:
If I leave them where they are, will they be good on Saturday?
Would re-freezing wreck them?
Would doing so not be worth it, and I should just eat them now?
