I am the friend with the rabbits

we bought six rabbits last night. For those who are interested, call your local 4-H chapter and ask an adult if they know of anybody who raises meat rabbits. We got californians. New Zealand rabbits area also supposed to be good eating. We just dispatched the first and guapo did the butchering, sorting through the organs. nothing, um, ruptured. The next five are reserved for a party on saturday.
Please let me say that i am so glad we are doing one tonight, we'll be much better prepared on saturday, and we have an idea that it takes an hour to get one prepped, we should speed that time up as we get more experience.
The meat was briefly marinated in olive oil, sage, and onion, then breaded and cooked in the skillet with a little butter and olive oil. yum. The liver, cooked with onions as suggested below, yum again, but i'm working on a texture issue with liver and didn't eat much.
What about the lungs? guapo cooked them with the liver, i didn't taste it, he said its one of the weirdest things he's ever eaten, and didn't elaborate from there.
