I happen to have a glut of Idaho type baked potatoes and hate to see them go to waste. I was always told that potatoes don't freeze well so haven't tried it for decades, but in googling and reading an old thread here it appears that if you shred them first as for potato pancakes or hash browns, or blanch them whole, it can work.
We don't have a cool place to store them right now as the fridges are full and we are approaching our hottest month.
I hate to see food go to waste and would like to do something with these. Any suggestions?
