Freezing French treats

Clarissa | May 23, 2003 09:15 AM

I have to buy a few things for Monday, but can only go to the pastry shop (a really fine place) today. Since most things stay fresh for about one or two days, I'm considering freezing them but am not sure if it'll go okay. The items are:

1) Almond croissants
2) Plain croissants
3) French macaroons
4) Fruit tarts (with a bit of pastry cream)

I know fresh is best, but would second-best be to simply refrigerate or to freeze? It doesn't have to wind up perfect, just decent. Thanks for any input.
