I have to admit that until I read a post below, I had no idea that cheese could be frozen, and would like to know more about this. I love cheese, especially aged NY/Canadian cheddar types, but eat it very sparingly because the saturated fat/cholesterol content isn't particularly appropriate for my age and girth.
What kinds of cheeses can be frozen without detriment, and for how long? I'm guessing that the foofy goat cheeses that are in vogue today would be trashed, but that's not a concern to me. After a brick has been cut, is plastic wrap sufficient for repackaging for freezing?
