For some reason, Kodiak Kakes whole wheat pancake mix makes better flapjacks than I can make from scratch, not to mention the convenience of only adding water. This week I added some Trader Joe's freeze-dried blueberries to the mix, which I always allow to rest for 20 minutes before cooking the flapjacks (this assures even hydration, eliminating lumps). By that time, the berries were soft. I much preferred the flavor to that of fresh of frozen berries in pancakes. I didn't put in a LOT of them, but enjoyed the more intense burst of blueberry flavor when a forkful contained blueberry. I'm looking forward to trying them with freeze-dried banana.
