A friend reported to me last night that she had discovered that the "cornbread" she made last week was not made with cornmeal but grits. She did not realize it at the time and had raved about what a great crunch the stuff had. I'm intrigued...has anyone done this either on purpose or by accident before. She said they could not quit eating it. She was using my buttermilk cornbread recipe with no flour, just egg, buttermilk, baking soda, salt and fat. She said it did not rise a whole lot and was wondering at the time why. Then made the discovery and the mystry was revealed.
