Well, Foodie2, I sort of butchered your original oodles of red cabbage dish, but the intent was there, and it was still good! I had found the original recipe on epicurious after your post, and used some of those quidelines too. I did use the half of the red cabbage I had and the half of the radicchio I had. I cheated and bought a rotisserie chicken, and when I got home realized my bf had eaten the last pear, so I used oranges instead. I also used a red onion and the toasted walnuts, but no endive. I had 7 kinds of cheeses in my fridge and no bleu cheese, so I felt I had to use something I already had and used chunks of gruyere! I, too, went heavy on the garlic and heavy on the balsamic (it seemed the epicurious recipe had too much oil in it to me.) Anyway, after my butchering your original dish, it was very, very good, and I would imagine even better with pears. The oranges and the balsamic were very good though. I sauteed some of it last night and ate that with garlic bread, and then I actually ate the rest of it raw today for lunch... it was good this way too! Thanks for the inspiration Foodie2!
