I just got back from a 4 night stay at Xandari Resort outside San Jose in Costa Rica. I can not say enough about their fabulous fresh food! They use fresh organic vegetables and fruits grown on the grounds. The focus is on low fat, healthy foods, but on a vastly more sophistocated and gourmet level than any vegetarian restaurant I've ever been to (they are not only vegetarian). The veggies were so great that every little steamed veggie garnish on the plate was a delight! The soups were intense essence of vegetables. My favorite dish was the fish tacos at lunch, made with sea bass with salsa of chopped mangoes, tomatoes and jalopenoes with a cilantro mayonaisse.
Their $18 price fixe meal includes soup or salad, entree, and dessert.
Soups included sopa negra, squash soup, chilled gazpacho, and cream of hearts of palm.
Entrees included poached sea bass with green salsa and red salsa (both salsas basicly chopped veggies and herbs), black sesame crusted chicken breast with plum sauce, stir fried veggies with spicy tamarind sauce, grilled sea bass with greek olives and feta.
Desserts included a very light version of tres leches, an intense coffee flan, and key lime custard with merenge topping.
