When in France about a rear ago we had a wonderful and hearty flageolet bean soup with chicken. I have a pound of dried flageolets in my pantry and would love to recreate this very flavorful soup which had lots of herbs, veggies (carrots, celery, onion, etc.), and no bacon (we asked...we do not eat pork). It was very hearty, almost like a stew. Does anyone have such a recipe?
