What's Your Favorite New Trick?

I just got a pressure cooker and have learned that I can easily make carnitas, pho, and all sorts of other good stuff that used to "take too long". It is going to open the door to a lot of other options -- Moroccan honeyed lamb, tagines, cochinita pibil, all sorts of deliciousness.

What have you learned lately that has changed your approach to cooking?
