It's starting to get cold in Texas and I feel like it's time to stock the freezer with some soups and stews to get us through the weeks. So far I've learned soups with potatoes, dairy, and pastas aren't freezing well for me. Anyone have good recipes to share and/or freezing tips?
My favorite so far is this lazy Taco Soup:
-4 cups chicken or veg broth
-1 can beer
-1/2 can tomato paste
-2 lb ground turkey seasoned with taco seasoning, browned
-2 cans diced tomato with green chili
-2 cans corn
-1 can black beans
-1 can kidney beans
-bell peppers (I usually use two)
-1 tbsp cumin
-1/2 tsp cinnamon
-1 tsp minced garlic
