What is exciting in the 3 star space these days?

I'm looking for an exciting dining experience for a celebration just after Christmas. In the past we have done Eleven Madison in the peak of it's NYC menu, Brooklyn fare in the peak of it's hype, and a few 2, 1 stars. My all time favorite spot to dine has always been Kyo Ya when it was under chef Sono, but his new place doesn't look as good. I looked at the 3 star list for this year and it looks pretty stale. Is it worth going to Per Se? What spots are michelin sleeping on? There must be something fresh happening.
