Eve In Eden - Pomegranate Summer Cocktail

Pomegranate? Did you know scholars consider that the fruit of the tree of knowledge is most likely a pomegranate? Certainly not an apple because apples did not grow anywhere near anyplace Eden could have been. Seems the boys at the King James Translation Institute got things mixed up a bit and translated fruit to apple. I could go on here about Latin, Greek and more ancient languages, but it's just an intro to tell you why I named this one Eve in Eden

It's a riff on a Margarita, I suppose, but tweaked for summer. Eve would have been a good name but it just doesn't roll. Not at all what language mavens would call euphonious.

Good summer sipper though.

Eve in Eden

2 oz Tequila (I've made it with Gin, equally good in a different way)
3/4 oz Cointreau
3/4 oz fresh lime juice
1 oz Pomegranate juice (I use Pom Wonderful, the real thing to my taste, but TJ's frozen pom juice would work as well)

Add to a Collins glass.
Fill with seltzer.
Add ice. (Ok, don't fill it all the way back at the seltzer step).
Stick a straw in it.
Slice of lime.

A good one, if I do say so myself.
