I am looking to purchase a 11 inch skillet and was leaning towards the 4* Demeyere Proline pan for my gas cooktop. I already have the larger Sauté Pan which I am happy with but it's too big for frying eggs and the like particularly when it comes to washing up for a small amount of food.
I note the Essteele Per Sempre has a copper base but cannot find much in terms of comparison with its Belgium cousin. Additionally I hear quite a bit by Mauviel.
As an alternative to SS, I handled a Solidteknics Aus-Iron similar size skillet. Although I love the work done to make this product ( and I am from Aussieland too), I found it uncomfortably too heavy.
Keen on thoughts about the 3 SS brands.
