Entrees for entertaining that are not large hunks of meat

I have come to the realization that I don't like cooking large hunks of meat or poultry for entertaining for a number of reasons.

I prefer what we Minnesotans call "hot dish"---one dish mains that can be nicely accompanied by a good salad and bread and a nice dessert. Here are some examples of what I have in mind:

**a baked ziti made with hot Italian sausage
**a chicken pot pie
**a fabulous poultry stuffing (I love Kenji Alt's recipe which has a fair amount of sausage in it). https://www.seriouseats.com/classic-s...
**beef stroganoff
**chicken paprikish
**Smitten Kitchen's version of Momofuku Bo Ssam---Yes, I know this is a big hunk of meat but I can prepare it ahead of time and the low oven cooking temp means I don't have to stress out about overcooking the meat. https://smittenkitchen.com/2019/07/cr...

My thought is that I want to have a short list of these "one dish" mains and then find the best possible recipes for these these dishes. (I love my recipe for baked ziti and I also love Kenji's dressing and Deb Perelman's version of Momofuku Bo Ssam. But I would need to find excellent versions of the other dishes I listed.)

What great one dish mains can you add to my list? Thanks in advance.
