I find myself needing to make vegetarian enchiladas for a group of over 100. I have a couple of recipes I'm considering adapting to this huge quantity but none of them really thrill me. In a perfect world there would be a recipe intended for mass production that is easy to prepare and high in deliciousness. I've poked around all of the usual recipe sites, my vast cookbook selection and even some institutional cooking sites--including the U.S. Navy--but have yet to have an epiphany. Help???
