Egg-free cake ideas

Does anyone here have ideas for baking a cake without using eggs? My son, whom I'm breast-feeding, has an egg allergy and a soy allergy. It's hard to find recipes that are truly cater to this – most things are fully vegan (dairy is fine for us) often vegan gets paired with gluten-free these days (which just sounds like extra hassle). Plus, a lot of these recipes call for some kind of egg alternative that uses soy.

For anyone who is interested, I've had excellent luck substituting Chia seed for eggs in cookies. You soak the Chia seeds and then blend them up – or pulverize the seeds and then soak them. Whichever is easier. It's about 1/4 Cup of the hydrated seeds per egg. The thing about cookies, though, is that it's pretty easy to experiment with a small batch. A cake, on the other hand, which I really want to turn out right the first time, is harder!

I was considering a cheesecake using that chia seed idea. Also wondering if applesauce or pumpkin would work well in a flour-based cake. Any thoughts are welcome! TIA
