I have some leftover duck that I'd like to eat tonight wrapped in some pancakes, Peking-duck style. I'll be adding some hoisin and scallions, and then wrapping up the meat. The problem is, I don't know what I should use for wrappers. Ideally, I'd make wrappers myself.
Would a basic chapati-like recipe make sense? I probably only want to make wrappers if the entire process, start to finish, will take under 45 minutes. Ideally less.
So, any ideas for something quick and homemade for wrapping my duck?
